Sponge in the middle cakes is run by Karen Gapp, who has been creating exquisite celebration cakes for family and friends for many years. Karen believes that finely made, beautifully crafted celebration cakes should be available at realistic prices.

Using only the very finest ingredients, great skill and artistry Karen creates wonderful cakes which will add that extra special touch to a very special day. Karen has an extensive portfolio, some of which can be viewed by browsing the galleries on this website, or she can design your own unique sugar creation, especially for your special celebration. Hand made sugar models and flowers can be created, to provide you with an unusual memento of your day.

Karen has been making and decorating cakes for the last 18 years in one form or another, she has gained the level 2 in City and Guilds sugar flowers and level 2 and 3 in City and Guilds sugar craft Karen also has a level 3 City and Guilds in creative art.

Karen has also done some teaching of the NCFE sugar craft course at a local college and is available to do one to one teaching for flowers or sugar models. Please contact Karen to find out more about the one to one teaching.
